For best results when you're baking, leave butter and eggs at room
temperature overnight.
Never open the oven when baking. The cold air will sink your cake!
The smaller the item, the higher the baking temperature. For
example, Chef Jim Lahey bakes mini chocolate chip-toffee cookies at 500
degrees Fahrenheit for only 4 minutes for the "perfect end result!"
Prevent sharp edges on muffins, cookies, or quick breads by greasing the muffin cups or pans only on the bottom and halfway up the sides so the batter is higher than the greaseline.
